Banana Chip Muffins

These are healthy and delicious.  You can’t lose!

  • 1 cup quick-cooking oats
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Dash of salt
  • 2 tablespoons butter, softened
  • 1/2 cup brown sugar
  • 3 or 4 ripe bananas, mashed
  • 1 egg
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 3/4 cup chocolate chips

In a mixing bowl, beat butter and brown sugar together.  Beat in the bananas, egg, applesauce, and vanilla.  Mix the dry ingredients together and then stir into the wet ingredients.  Fold in chocolate chips.

Grease muffin tin and fill each up 3/4 full.

Bake at 350 for 15 to 20 minutes.

There’s nothing like a delicious batch of pancakes!

Hope you all had a great week! If you’re looking for a delicious and relaxing Saturday breakfast for tomorrow, check this out!  When I make these pancakes, it’s one of the few ways I can convince my husband to eat breakfast :-)   Try them for yourself!

Oat Pancakes

1  1/3 c. flourdscf1096

1/2 c. whole wheat flour

1/4 c. wheat germ

1 c. quick oats

2 Tbs baking powder

1/2 tsp salt

Combine these ingredients, then add:

2 c. skim milk

2 eggs

dscf10951/4 c. canola oil

Mix all together until combined.  For each pancake, pour about 1/4 cup of batter onto a hot griddle or skillet that has been sprayed with cooking spray.  Flip the pancake when the top is covered with bubbles and the edges look cooked.  Makes about 18 pancakes :-)
